
Easy Skillet Fried Rice
Ingredients

2 cups white rice, cooked

1 egg, beaten

¼ cup green onions, chopped
-
½ cup sweet onions, chopped

4 tablespoons light soy sauce

4 tablespoons unsalted butter
-
½ teaspoon salt
-
½ teaspoon ground black pepper

8 ounces frozen bag of peas & carrots, thawed

Directions

In a large skillet, melt 2 tablespoons of butter; add both onions and cook until tender, remove from skillet and set aside.

In a separate skillet, add more butter, let melt and add egg; scramble egg until firm.

Add rice and stir. Pour in soy sauce; stir frequently.

Add onions to the rice mixture and season with salt and pepper. Keep stirring rice to avoid sticking to skillet.

The last 2 minutes of cooking, stir in peas and carrots. Stir in more soy sauce if rice looks too dry. Remove from pan.
