Easy Skillet Fried Rice

Ingredients

  • 2 cups white rice, cooked      

  • 1 egg, beaten              

  • ¼ cup green onions, chopped

  • ½ cup sweet onions, chopped                

  • 4 tablespoons light soy sauce

  • 4 tablespoons unsalted butter                 

  • ½ teaspoon salt

  • ½ teaspoon ground black pepper

  • 8 ounces frozen bag of peas & carrots, thawed

Directions

  1. In a large skillet, melt 2 tablespoons of butter; add both onions and cook until tender, remove from skillet and set aside.  

  2. In a separate skillet, add more butter, let melt and add egg; scramble egg until firm.

  3. Add rice and stir.  Pour in soy sauce; stir frequently.  

  4. Add onions to the rice mixture and season with salt and pepper.  Keep stirring rice to avoid sticking to skillet.  

  5. The last 2 minutes of cooking, stir in peas and carrots. Stir in more soy sauce if rice looks too dry.  Remove from pan.
