Creamy Mashed Potatoes

Ingredients

  • 3 ½ cups chicken broth

  • 5 russet potatoes, cleaned, peeled & chopped

  • ½ cup light cream

  • 2 tablespoons butter

  • ¼ white pepper

Directions

  1. Place broth and potatoes in a saucepan; heat to a boil. 

  2. Cover and cook over medium heat 10 minutes or until tender; drain, reserving broth. 

  3. Mash potatoes with ½ C broth, cream, butter and pepper. 

  4. Add additional broth, if needed, until desired consistency.
