Fried Croakers
Ingredients

5 pounds croakers, heads removed and cleaned

4 quarts canola oil
-
8 ounces AUTRY MILL seafood mix
-
2 teaspoons kosher salt
-
1 teaspoons black pepper

Directions
-
Heat the oil to approximately 275°.
-
Clean fish and pat dry. Cut 3 slits on both sides of the fish to allow easy cooking.

Season fish with salt and pepper on both sides.

Dip in seafood mix, making sure fish is coated well.
-
Drop fish in hot grease one at time. Cook for 8-10 minutes; drain on paper towels.
