Fried Croakers

Ingredients

  • 5 pounds croakers, heads removed and cleaned

  • 4 quarts canola oil

  • 8 ounces AUTRY MILL seafood mix

  • 2 teaspoons kosher salt

  • 1 teaspoons black pepper

Directions

  1. Heat the oil to approximately 275°.

  2. Clean fish and pat dry.  Cut 3 slits on both sides of the fish to allow easy cooking. 

  3. Season fish with salt and pepper on both sides. 

  4. Dip in seafood mix, making sure fish is coated well. 

  5. Drop fish in hot grease one at time.  Cook for 8-10 minutes; drain on paper towels.
