
Batter Fried Fish Fillets
Ingredients

3 pounds tilapia or cod fillets

1 teaspoon kosher salt

1 teaspoon ground black pepper

2 teaspoons OLD BAY Seasoning

2 cups All-Purpose flour

1 tablespoon garlic powder

1/2 teaspoon ground cayenne pepper

2 large eggs, lightly beaten

1 1/2 cups light beer
-
Canola oil for frying
Garnish:
lemon slices
tarter sauce
malt vinegar

Directions

Add oil to a deep fryer 2-3 inches deep. Heat oil to 375 degrees.

Cut fish into squares, about 2-inches thick; pat dry with paper towels and season with salt, black pepper.

To make the beer batter, whisk together the flour, garlic powder, cayenne pepper and OLD BAY.

Stir in the lightly beaten egg, then gradually whisk in the beer until the batter forms and is no longer lumpy.

Dip the fish one piece at a time into the batter, then place in the hot oil.

Cook for 3-4 minutes, or until the fish is a nice golden brown.

Drain on a wire rack.
