Southern Cabbage w/Sausage

Ingredients

  • 1 large head of cabbage, cleaned & chopped

  • 1 medium sweet onion, sliced

  • ½ each red & green bell peppers, sliced

  • 2 clove garlic, minced

  • 4 slices bacon, chopped

  • 1 package HillShire Beef Sausage, sliced

  • 2 tablespoons Tony Chachere's Creole Seasoning

Directions

  1. In a large skillet, fry bacon until crisp; drain on paper towel and reserve bacon grease.

  2. Cook the sausages in bacon grease until done; drain on separate paper towel.  Remove some of the grease.

  3. Add the onions and both bell peppers and season with 1 tablespoon of the Creole Seasoning.  Stir to combine.

  4. Add garlic and stir. Cook 5 minutes. 

  5. Start adding in the cabbage, a little at a time. Make sure to stir to combine the vegetables with cabbage.  Cover skillet and let the cabbage cook down.

  6. Keep adding cabbage and the remaining creole seasoning until all of the cabbage is in the skillet.  Make sure to stir to prevent cabbage from burning. Cover skillet and cook 15 minutes.

  7. Remove lid; add the sausages and bacon* to the skillet. cook uncovered until cabbage is tender. (The cabbage will accumulate a lot of liquid so it is best to cook the last few minutes uncovered).

*NOTE: putting the bacon back in the skillet is optional.
