Terri's Scampi-Style Shrimp

Ingredients

  • 1 teaspoon butter

  • 2 teaspoons olive oil

  • 3 cloves garlic, minced

  • 1 pound shrimp

  • ¼ cup white wine

  • juice of 1 lemon

  • ¼ teaspoon each salt & pepper

  • ¼ cup Italian parsley

  • Lemon Wedges

Directions

  1. Melt butter and oil together in saucepan.  Add garlic, cook for 1 minute; add shrimp. 

  2. Cook for 1 minute, add wine, lemon juice, salt and pepper.

  3. Cook quickly while sauce reduces and shrimp turns pink.  Do not overcook. 

  4. Sprinkle with parsley, garnish with lemon wedges.  Serve over noodles.
