Roasted Brussels Sprouts

Ingredients

  • 2 pounds fresh Brussel sprouts, washed & cut in half (remove stems & outer leaves)

  • 1 red onion, sliced

  • 2 garlic cloves, minced

  • 1/2 red bell pepper, sliced

  • 1/2 yellow or orange bell pepper, sliced

  • 1/2 green bell pepper, sliced 

  • 2 sliced bacon, chopped

  • 1 jalapeño pepper, seeded & chopped

  • 4 tablespoons extra virgin olive oil

  • 1 tablespoon seasoning salt

  • 1 teaspoon ground black pepper

  • 1/2 teaspoon red pepper flakes, optional

Directions

  1. Preheat oven to 400 degrees.  Put all Brussel sprouts, vegetables, garlic and bacon in a large bowl;  pour in olive oil; stir to mix well.

  2.  Grease a baking sheet pan with cooking spray. (for easier clean up, line the pan with foil)

  3. Pour the sprouts and vegetables on sheet pan; season with seasoning salt and pepper. 

  4. Spread the evenly on pan; add more seasoning if need.  Sprinkle red pepper flakes on top.

  5. Roast in oven for 40 minutes, stirring at least once, until Brussel sprouts and veggies are tender.

Optional:

Sprinkle parmesan cheese over sprouts after taking them out of the oven.
