
Roasted Brussels Sprouts
Ingredients

2 pounds fresh Brussel sprouts, washed & cut in half (remove stems & outer leaves)

1 red onion, sliced

2 garlic cloves, minced

1/2 red bell pepper, sliced

1/2 yellow or orange bell pepper, sliced

1/2 green bell pepper, sliced
-
2 sliced bacon, chopped
-
1 jalapeño pepper, seeded & chopped

4 tablespoons extra virgin olive oil
-
1 tablespoon seasoning salt
-
1 teaspoon ground black pepper
-
1/2 teaspoon red pepper flakes, optional

Directions

Preheat oven to 400 degrees. Put all Brussel sprouts, vegetables, garlic and bacon in a large bowl; pour in olive oil; stir to mix well.

Grease a baking sheet pan with cooking spray. (for easier clean up, line the pan with foil)

Pour the sprouts and vegetables on sheet pan; season with seasoning salt and pepper.

Spread the evenly on pan; add more seasoning if need. Sprinkle red pepper flakes on top.

Roast in oven for 40 minutes, stirring at least once, until Brussel sprouts and veggies are tender.
Optional:
Sprinkle parmesan cheese over sprouts after taking them out of the oven.
