Herb Rice w/Mushrooms
Ingredients

2 cups chicken broth

2 teaspoons fresh parsley, chopped

2 teaspoons onions, minced
-
½ teaspoon oregano leaves

1 cup long grain rice
-
1 tablespoon unsalted butter
-
4 ounces can sliced button mushrooms
Directions

In a 2-quart saucepan, combine broth, parsley, onion, and oregano.

Bring to a boil over high heat. Stir in rice and butter.

Cover and reduce heat to medium-low; cook 20 minutes. Remove from heat and let stand 5 minutes.

Fluff rice with a fork. Gently toss in mushrooms and serve.
