 Herb Rice w/Mushrooms

Ingredients

  • 2 cups chicken broth

  • 2 teaspoons fresh parsley, chopped

  • 2 teaspoons onions, minced

  • ½ teaspoon oregano leaves

  • 1 cup long grain rice

  • 1 tablespoon unsalted butter

  • 4 ounces can sliced button mushrooms

Directions

  1. In a 2-quart saucepan, combine broth, parsley, onion, and oregano. 

  2. Bring to a boil over high heat.  Stir in rice and butter. 

  3. Cover and reduce heat to medium-low; cook 20 minutes.  Remove from heat and let stand 5 minutes. 

  4. Fluff rice with a fork.  Gently toss in mushrooms and serve.
