Prosciutto-Wrapped Asparagus

Ingredients

  • 1 pound asparagus

  • 1 pound thinly sliced prosciutto

  • 1 teaspoon kosher salt

  • 4 cups water

  • 1 teaspoon ground black pepper

  • ½ teaspoon garlic powder

  • 2 teaspoons extra virgin olive oil

Directions

  1. Preheat oven to 400 degrees.  Align tips and trim spear to the same length. 

  2. Bring water to a boil in a large pot; add asparagus and cook until just tender 2-3 minutes depending on thickness. 

  3. Drain and transfer to an ice bath to stop cooking; drain and let dry. 

  4. Wrap each asparagus spear with a slice of prosciutto; season with garlic powder and black pepper. 

  5. Place asparagus on flat pan, drizzle with olive oil; cook in oven 10-12 minutes, turning frequently to cook prosciutto evenly.
