
Smothered Chicken
Ingredients

2 pounds chicken, legs & thighs

1 1/2 cup All-Purpose flour

1 teaspoon salt

1 teaspoon coarse black pepper

1 tablespoon onion powder
-
1 teaspoon poultry seasoning

1 tablespoon garlic powder
-
1 teaspoon smoked paprika

1 teaspoon cayenne
-
1/4 cup vegetable oil
-
2 cups chicken broth
-
1 cup whole milk
-
2 teaspoons minced garlic

1 large sweet onion, sliced

Directions

In a large bowl, mix flour and all the seasonings until well incorporated.

Coat the chicken with the seasoned flour coating all sides of the chicken. Place chicken on flat pan and set aside. Reserve the seasoned flour

Pour oil into a large pan and heat to 350 degrees. Turn the temperature to medium heat and start adding in the chicken, but be sure to not over crowd the pan.

Cook chicken in batches until golden brown; remove chicken from the pan and place on flat sheet pan. Leave the oil in the pan.

Add onions to pot; cook about 2 minutes. Add garlic and cook for an additional minute; remove onions and garlic from the pan.

Add 3 tablespoons of the seasoned flour to the oil in the pan; stir to mix well. Pour in 2 cups of chicken broth. Whisk while pouring in the broth. Make sure there aren't any lumps.

Let the gravy cook for about 2 minutes on medium heat; pour in 1 cup of milk.

Cook gravy for 5 minutes; place the chicken, onions and garlic in the gravy pan. Cover all the chicken with the gravy.

Place a lid on the pan and cook on low for 30-35 minutes. Be sure to occasionally turn the chicken.
