
Homemade Granola Bars
Ingredients

3 cups rolled oats

1 cup walnuts, chopped*

1/2 cup unsalted butter

1/2 cup honey
-
1/2 cup dark brown sugar, packed

2 teaspoons vanilla extract

1/4 teaspoon salt
-
1/2 cup dried cranberries (Craisins)

1 cup mini chocolate chip morsels

* 1 cup chopped almonds or pecans can be substituted

Directions

Preheat oven to 350 degrees. Line a 9x9-inch pan with parchment paper, letting the paper over-hang on the side of the pan. Spray with PAM.

Pour oats and 3/4 cups of nuts on a baking sheet; spread evenly. Bake 15 minutes until toasted. Pour oats into a large bowl.

In a separate bowl, combine the dried cranberries and 3/4 cups of mini morsels

In a medium saucepan, combine butter, honey, brown sugar, vanilla extract and salt. Cook on medium temperature until butter is melted and the sugar is dissolved, stir frequently.

Pour butter mixture over oats and nuts; stir to combine. Add cranberries and morsels and stir to mix well. Let cool in pan for 15 minutes.

Pour the granola mixture into the greased pan. Firmly press down the granola with a spatula to avoid any loose granola crumbs.

Sprinkle the remaining 1/4 cup of nuts and 1/4 cup of mini morsels on top of granola. Place the pan in the refrigerator to firm for at least 2 1/2 hours.

Remove pan from refrigerator and lift the granola from the pan using the parchment paper.

Place on cutting board and cut into rectangles.

NOTE:
I like to wrap the granola bars individually with plastic wrap and store in a ziplock bag.
