
Turkey Stuffed Bell Peppers
Ingredients

6 bell peppers, top removed and seeded*

1½ tablespoons extra virgin olive oil

1 medium onion, chopped

2 cloves garlic, minced

1 pound ground turkey**

1½ cup rice, cooked
-
1 cup of pasta sauce
-
1 tablespoon fresh parsley, chopped

1 teaspoon kosher salt
-
1 teaspoon Italian seasoning
-
½ teaspoon ground black pepper

½ cup mozzarella cheese, shredded

* Any color of bell pepper can be used in this recipe
**Ground Beef or Italian Sausage can be substituted
These peppers can be served alongside the entree or as a quick lunch.
Directions

Preheat oven to 375°.

Cook turkey in a large skillet until done; drain juices.

Stir in onions, garlic and seasonings. Remove from stove and let cool.

In a large bowl, combine the turkey mixture, rice, pasta sauce and parsley; mix well.

Stuff the peppers half-full with the rice stuffing; pour remaining sauce into dish and set peppers on sauce. Sprinkle cheese on top of each pepper.

Cover peppers with foil and cook for 45 minutes. Remove foil and cook another 15 minutes. Remove from oven and let cool.
