Cobb Salad

Ingredients

  • 6 slices bacon

  • 3 boiled eggs

  • 1 head iceberg or romaine lettuce, shredded

  • 3 cups cooked chicken breast, cubed

  • 1 cup grape tomatoes, cut in half

  • ¾ cup blue cheese, crumbled*

  • 1 avocado - peeled, pitted & diced

  • 1 small red onion, thinly sliced

  • 8 ounce Ranch dressing 

*blue cheese, optional

Directions

  1. Place eggs in a saucepan and cover completely with cold water.

  2. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes.

  3. Remove from hot water, cool, peel and chop.

  4. Cook bacon in a large, skillet on medium high heat until evenly brow; drain, crumble and set aside.

  5. Pour shredded lettuce on a large platter.

  6. Arrange chicken, eggs, tomatoes, blue cheese, bacon, avocado and green onions in a row on top of the lettuce.

  7. Drizzle dressing over salad.
