Lemon Cheesecake w/Fruit Toppings

Ingredients

  • PAM spray

  • 4 large egg whites

  • ¼ cup graham cracker crumbs

  • 2-8 ounce package cream cheese, softened

  • 14 ounce sweetened condensed milk

  • 1 large egg

  • 1/3 cup lemon juice

  • 1 teaspoon vanilla extract

  • 1/3 cup All-Purpose flour

  • ½ cup fresh raspberries, sliced

  • ½ cup fresh blueberries, sliced

  • ½ cup fresh strawberries, sliced

Directions

  1. Preheat oven to 300°; spray bottom of 8-inch spring form pan; sprinkle crumbs on bottom of pan. 

  2. In  mixer bowl, beat cheese until fluffy; gradually beat in milk until smooth. 

  3. Add egg whites, egg, lemon juice and vanilla; mix well. 

  4. Stir in flour; pour into prepared pan. 

  5. Bake 50-55 minutes or until center is set. 

  6. Cool; chill and serve.

  7. Spread fruit over cheesecake.
