
Turtle Cheesecake
Ingredients

2 cups Oreo cookie crumbs

3-8 ounce package cream cheese, softened

6 tablespoons unsalted butter, melted

¾ cup granulated sugar

14 ounces caramel candies

1 tablespoon vanilla extract

½ cup whole milk

3 large eggs

½ cup pecans, chopped finely

2 chocolate squares

Directions

Preheat oven to 325°. Mix crumbs and butter; press onto bottom and 2 inches up in a 9-inch spring-form pan. (300° if using a dark spring-form pan).

Place caramels and milk in small bowl, microwave on high or until caramels are melted; stir until smooth.

Pour ½ caramel mixture into crust and refrigerate 10 minutes. Set remaining caramel mixture aside.

Beat cream cheese, sugar and vanilla with mixer on medium speed until well blended. Add eggs, one at a time, mixing on low.

Pour batter over caramel mixture in crust. Bake 1 hour 10 minutes or until center is set.

Run knife around side of pan to loosen cheesecake; let cool before removing.

Refrigerate 4 hours. Top with remaining caramel and pecans; drizzle chocolate over cheesecake.
