Homemade Funnel Cake

Ingredients

  • 1 cup confectioners sugar                  

  • ½ teaspoon ground cinnamon

  • 4 cups Bleached Plain flour                

  • 1 cup light brown sugar, packed

  • 1 tablespoon baking powder                        

  • ½ teaspoon kosher salt

  • 3 large eggs                                  

  • 2¼ cup whole milk

  • ½ teaspoon vanilla extract                      

  • 2 cups vegetable oil

Topping Variations:

Ice cream, any flavor

cooked apple slices

fresh berries

powdered sugar

cinnamon sugar

chocolate syrup 

Directions

  1. In a small bowl, combine sugar and cinnamon; stir to mix, set aside.  

  2. In a large bowl, sift flour, brown sugar, baking powder and salt.  

  3. In another bowl, whisk together eggs, milk and vanilla.  Fold dry ingredients into the wet mixture; whisk until smooth.  

  4. Heat oil to 360° in a large skillet.  Hold your finger under the opening of an 8oz. funnel and fill it with ¾ cup batter.  

  5. Working over the oil, carefully remove your finger from the funnel opening and slowly drizzle the batter into the oil, making 8 designs.

  6. Fry until golden brown, about 2 minutes per side.  Remove from oil and let drain on paper towels.  

  7. Sprinkle with some of the sugar-cinnamon mixture.  Repeat procedure until all the batter is used.  Serve warm.
