
Banana Bread w/Brown
Sugar Topping
Ingredients

1 stick (1/2 cup) unsalted butter

4 large ripe bananas

2 large eggs

2 teaspoons vanilla extract

3/4 cups granulated sugar

1/2 cup dark brown sugar
-
2 cups all purpose flour**
**(whole wheat flour can be substituted)

1 teaspoon baking soda

1/4 teaspoon salt

1/4 teaspoon baking powder

1/2 teaspoon ground cinnamon

Directions

Preheat oven to 350 degrees. Grease a loaf pan generously with butter; set aside.

In a large bowl, microwave the butter for 1 minute or until melted. Add the bananas to same bowl and mash with a fork.

Add vanilla extract and eggs; using same fork continue mashing and stirring until no yellow streaks of egg remains. Pour in both sugars and stir until well combined.

In a separate bowl, whisk together flour, baking soda, salt, baking powder and cinnamon.

Add dry ingredients to wet ingredients and stir together with spatula just until combined. Pour batter into buttered loaf pan.

Bake 60-75 minutes until toothpick inserted in the center of bread comes out clean. Remove from oven and let cool completely on wire rack.
