Creamy Rice Pudding w/Raisins
Ingredients

3 cups cooked long grain white rice

2 cups whole milk

1 cup evaporated milk

1 1/4 cups golden sugar or granulated sugar

4 tablespoons unsalted butter, melted

1 cup golden or dark raisins, optional
-
2 teaspoons vanilla extract

1/2 teaspoon lemon extract
-
1 teaspoon ground cinnamon

zest of one lemon
Directions

In a medium saucepan, combine cooked rice, milk, sugar, and melted butter; stir to combine.

Cook on medium for 15 minutes until rice mixture starts to thicken.

Add raisins, vanilla and lemon extracts and stir.

Turn temperature to low and continue cooking rice mixture; add cinnamon.

When mixture thicken, stir in lemon zest. Cover pan and remove from stove.

Serve warm.
